City Meat Market | Bone Marrow

Bone marrow goes great with just about anything! Use bone marrow instead of butter or olive oil when roasting vegetables, spread it on toast, add it to stocks and broths, or even scoop out and melt the marrow on a beautifully cooked steak. We typically like to add something acidic (like a squeeze of lemon juice or some capers) to help balance the rich fattiness.
